1929 Orange Foam

Won first prize in the Mirror Free Recipe Contest (reference)

Ingredients:

  • Juice from 1 orange

  • Juice from ½ lemon

  • 2 tablespoons of cornflour

  • 3 eggs (separated)

  • 1 cup of loaf sugar

  • 2 cups hot water

  • 1 pint (600ml) milk

  • 2 tablespoons extra sugar

  • A few drops of vanilla essence

Method:

  1. Put two cups of hot water in lined saucepan with loaf sugar and bring to boil

  2. Mix cornflour with enough cold water to make a smooth paste then stir it into the sugar

  3. and water and cook for 5 minutes stirring all the while.

  4. Add strained orange and lemon juice then leave to cool

  5. Whip egg whites to a stiff froth and pour the cool cornflour mixture into it and beat it rapidly until the whole mixture is light and foamy

  6. Store in a cool place until required and serve with custard

  7. To make a boiled custard beat the 3 egg yolks then add milk, extra sugar and vanilla essence. Mix well and bring to boil on stove. When cold pour over cooled Orange Foam to serve
