1929 Ginger Fruit Cake

Won first prize in The Mirror Free Recipe Contest (reference)

Ingredients:

  • 4 oz. (120g) flour

  • 2 oz. (60g) cornflour

  • 4 oz. (120g) butter

  • 3 oz.(90g) castor sugar

  • ¼ teaspoon ground ginger

  • 1 teaspoon baking powder

  • 2 oz. (60g) raisins

  • 2 oz. (60g)sultanas

  • 1 oz. (60g) candied peel

  • 2 eggs

  • 1 large tablespoon milk

Method:

  1. Slice the peel, stone the raisins and cut them in halves.

  2. Beat the butter and sugar to a cream, add well beaten eggs and continue beating ‘til smooth, then stir in peel, raisins and sultanas.

  3. Mix together the baking powder, flour, cornflour and ginger and add them by degrees, then the milk. When all are mixed, turn into a well greased tin and bake for one and a half hours in a moderate oven.
