1915 Cheap Ginger Cake

Won fourth prize in the Sunday Times Recipe Contest (reference)

Ingredients:

  • 1 ¼ lb (600 g) flour

  • ½ lb (230 g) treacle

  • ½ lb sugar

  • ¼ lb butter

  • 2 eggs

  • 4 tablespoons of ground ginger

  • 1 teaspoon each of: ground cloves, ground allspice, soda

  • A little buttermilk

Method:

  1. Melt the butter, sugar and treacle together with buttermilk

  2. Mix all the dry ingredients and then pour into the treacle mixture

  3. Add the well beaten eggs and again mix the ingredients well together

  4. Pour the mixture in a greased pan and bake in slow oven for an hour and a half

  5. If liked, the cake can be decorated on top, with split almonds, but it is nice quite plain
