1929 Gingerbread Sponge

Won first prize in The Mirror Recipe Contest (reference)

Ingredients:

  • 1 gill (½ cup) of boiling water

  • 1 level teaspoon bicarbonate of soda

  • 1 lb. (440g) of treacle

  • 3 oz (85g) of lard

  • 4 oz (110 g) of sugar

  • ¾ lb. (330g) of flour

  • 1 teaspoon of cinnamon

  • 1 egg

Method:

  1. Add bicarbonate of soda to boiling water and let stand until almost cold

  2. Combine treacle, lard and sugar together and melt

  3. Mix flour and cinnamon together then add melted treacle mixture

  4. Beat egg well and add to the mixture

  5. Add dissolved bicarbonate mixture and beat the mixture well.

  6. Put in a lined, greased tin and let stand for an hour then cook in a moderate oven

  7. Only check on cooking progress after 1 hour has passed.
